Chocolate lava cakes are incredibly quick and easy to make, it is embarrassing how often this recipe is made in my house! The way to perfect chocolate puddings is all in the cooking time, too long and you have an eggy chocolate cake and too short and they won’t make it out of the tin. However, once you have worked out the perfect cook time in your oven you will be able to consistently whip up the world’s most indulgent dessert in a matter of minutes.

Cook time: 5-7 minutes

Ingredients
65g butter
65g dark chocolate (the darker the better in my opinion)
100g caster sugar
2 eggs
30g plain flour
Pinch of salt
Cream or yogurt to serve
Method
- Preheat the oven to 180°C, take 4 ramekins (you can use metal pudding basins but this will affect the cook time) and grease with butter then dust thoroughly with cocoa powder.
- In the microwave or over a bain marie melt the chocolate and butter together.
- Add the sugar to the butter and chocolate mixture, then add the eggs one at a time and stir until fully incorporated.
- Sift in the flour and salt and gently fold in and transfer the mixture to your prepared dishes.
- Place in the oven for 5-7 minutes they should look cooked, but the centre of each cake should be slightly wet and still wobble.
- Serve with cream or yogurt and enjoy straight away!!
