These almond meal cookies are so unbelievably simple I can honestly whip up a batch in under 5 minutes, they are brilliant on their own or with a cup of tea. I have been known to make them in a lunch break when I just fancy that something sweet, however they are also great if you have friends coming over and nothing in your cupboards! The Almond flour gives these biscuits a higher protein content making them more filling and far healthier than your average cookie, it also adds a great flavour and lovely chewy texture.
Top tip: Lots of recipes will suggest that you roll your cookie mixture into balls. However, for this recipe I always roll my cookie mixture into a log and then slice into rounds. I find this takes a lot less time and means you get more evenly sized cookies.
Ingredients
50g almond flour
50g self-rising flour
75g butter
1 egg yolk
75g sugar
Method
- Cream together the butter and sugar until soft and pale yellow in colour.
- Add the egg yolk and then both flours, fully combine.
- Divide into 10 evenly sized pieces (see top tip) before flatten each one slightly and placing on a baking tray. Push 2 flaked almonds into the top of each cookie.
- Bake for 10-12 minutes until golden brown, leave to cool.
- Enjoy with your favourite hot drink!
