Brigaderios originated in post WWII Brazil. They were created by the popular politician Gomes. His followers decided to create a new type of confectionary as a marketing strategy to provide interest and excitement amidst the endless campaigns. Due to shortages after the war this was difficult as chocolate, milk and sugar were scarce. Consequently, this recipe uses condensed milk, a store cupboard ingredient with a long shelf life, and cocoa powder which was readily available in this region. Lots of women sold these sweets from their homes in support of Gome. This was the first election in Brazil where women were allowed to vote.
Top tip: make sure the cocoa powder and condensed milk are fully incorporated when cold as this will allow for a smoother mixture.
Makes: 15 truffles
Prep time: 10 mins
Cook time: 2 ½ hours
Ingredients
30g cocoa powder
20g butter (plus extra to grease)
1 x 14oz can of sweetened condensed milk
100g vermicelli sprinkles
Method
- Thoroughly grease a plate with butter. You can use cling film as well if desired and this will be used later when truffles are cooling.
- Melt the butter in a pan on low heat.
- Removing from the heat, add the condensed milk, and sift in the cocoa powder. Whisk together until smooth. It’s best to do this off the heat to get a smoother consistency.
- Place back on the heat at a medium temperature and stir continuously.
- After roughly 5 minutes, the mixture should be thick. To determine if the mixture is ready, pull a wooden spoon through the mixture creating a divide. It should take 3-4 seconds to close.
- Transfer to the plate and chill for 1-2 hours until firm.
- Shape into small balls, roughly a tablespoon in volume and roll in sprinkles.
- Chill for another 30 mins and serve.
